Do you feel like you’re drowning in milk?

How do you use all that wonderful fresh milk from your family dairy cow?

Just as people with a flock of laying hens often wonder what to do with all those eggs (please visit toomanyeggs.com), those of us with a milk cow are often overwhelmed with the seemingly endless flow of wonderful, creamy milk, day in and day out. Who would want to waste even one drop?


We feel your pain and are happy to share our experiences, some happy and some sad. As I write this, a lovely acid-set chenna is draining on my counter. I made it with the last gallon of skim milk I had left over from a week of skimming cream for coffee, ice cream, and custard. I'll use half the chenna to make chenna poda, a delicious baked cheese recipe I modified from an Indian tradition, and the other half to make a creamy sauce for meatballs. Or maybe I'll finally try making eezgii, a Mongolian baked cheese snack that supposedly resembles granola. Did you know Mongolians lived almost entirely on milk? But I digress. Today is a happy day.
